Cold-Water Smelt from Pristine Korean Lakes
Our Wakasagi (Hypomesus nipponensis), or Japanese smelt, are carefully harvested during the peak spring season (March–April) from the clean, cold lakes of Gangwon-do and Chungbuk. These naturally cool waters produce smelt with a delicate texture and savory flavor—ideal for premium culinary use.
Roasted Fresh, Flash Frozen for Quality
Immediately after harvest, the smelt are flame-roasted to enhance natural umami and then quickly frozen to lock in freshness. The product is packaged in 14kg boxes for efficient cold-chain handling and export.
Specialty Ingredient for Tsukudani
This smelt is primarily used as a key ingredient in Tsukudani, a traditional Japanese preserved dish simmered in soy sauce and mirin. After export, it is further processed for gourmet and seasonal gift markets.
Seasonal Supply & Export Conditions
Due to natural seasonal limits, annual production is concentrated in a short spring harvest window. Volume may be restricted, and pre-orders are highly recommended for international buyers.
